Prosciutto & Goat Cheese Crostini


1 baguette cut in 3/4 inch slices

6-8 ounces goat cheese

6-8 ounces thinly sliced Prosciutto

Olive oil

Salt & Pepper

Fresh Parsley


Preheat oven to 400 degrees. Line baking sheet with sliced baguette. Brush both sides of bread with olive oil and lightly salt and pepper each side. Bake until lightly toasted, approximately 8-10 minutes.

Let crostini cool slightly and spread each piece with room temperature goat cheese. Top each piece with a small mound of prosciutto. Drizzle the tops of the crostini with olive oil and broil until prosciutto is crispy, approximately 4-5 minutes.

Remove from oven and let cool slightly. Top each crostini with chopped, fresh parsley and serve.

This is wonderful served with Monkey Bay Sauvignon Blanc. The slightly dry and citrus nature of this wine is the perfect accompaniment to the sharpness of goat cheese. Perfect for that tailgate party!
